Ingredients (serves four people)
- 1 Tablespoon Olive Oil
- 4 pc Garlic, finely minced
- 2 pc Shallot, minced
- 1 cup Stewed Tomato
- 1 Tablespoon Honey
- ½ cup Apple Cider Vinegar
- 1 Tablespoon Ancho Chili Paste
- 1 cup BBQ Sauce
- 2 cups Vegetable Stock
- ½ teaspoon Cumin, ground
- ¼ teaspoon Clove, ground
- 2 ounces Dark Chocolate
- Sea Salt and Pepper to Taste
Directions
1. Heat the olive oil in a medium sized cooking pot to medium high heat. Add the garlic and shallot and cook for three minutes. Add the tomatoes and cook for two additional minutes. Next, add the honey and sugar and cook for two minutes. Add the vinegar, bbq sauce, vegetable stock, cumin, cloves, salt and pepper. Mix well, then cook on low for 15 minutes.
2. After 15 minutes have passed, add the chocolate and allow it to melt. Transfer the sauce to a mixing bowl and chill in the refrigerator until needed. Store up to one week chilled.
