Curried Lentil Soup

Ingredients (serves four people)

  • 1 pc Onion, chopped
  • 2 Tablespoons Olive Oil
  • 1 pc Carrot, chopped
  • 2 pc Garlic, finely minced
  • 1 teaspoon Oregano
  • 1 teaspoon Basil
  • 2 cups Tomato, crushed
  • 2 cups Lentils, dried
  • 8 cups Water
  • 1 Tablespoon Curry Powder
  • 1 Tablespoon Red Wine Vinegar
  • Sea Salt and Pepper to Taste

Directions

1. In a large cooking pot, heat the oil to medium high heat. Add the onion, carrot, garlic and cook for three minutes. Stir in the basil, oregano and curry and continue to cook for two minutes. Add the lentils, followed by the water and tomato. Bring the mixture to a boil then reduce the heat to low. Simmer the mixture for one hour, or until the lentils are fully tender. Once the lentils are tender, add the vinegar then serve warm.
