speltSpelt, one of the oldest known grains, was produced by humans more than 12,000 years ago. Spelt is the primitive form of wheat, developed from goat grass during the dawn of early civilization. The use of spelt is quite pronounced in the Bible as well as in Stone Aged carvings. During the Iron Age in Britain, spelt was so well grown that is was the main crop for human consumption up until the Bronze Age. However, with the advent of wheat, the use and cultivation of spelt diminished considerably since this crop yielded less finished product per acre.
