Purslane, while not a common ingredient in todays cookery, was widely popular prior to the 20th century. Widely used for thousands of years in Europe, purslane is slowly becoming more and more popular in the United States and Europe. Known as a plant of high nutrition, purslane was traditionally used to prevent and cure a number of ailments such a dry coughs and shortness of breath. As a pleasant herbal addition to any salad, the rich red color of the stems make a great decorative addition to any plate. Purslane compliments sorrel very well, as seen in the traditional French soup, Bonne Femme.

Vitamin A – Vitamin A, when converted into retinaldehyde, is a vital compound for healthy eyes. Furthermore, vitamin A is believed to fight against cataracts, macular degeneration and glaucoma. Vitamin A strengthens the membranes of the human body such as mucous membranes, respiratory, urinary and intestinal tracts. It is also essential for the lymphocytes, or white blood cells, that fight infection once in the body.
Vitamin C – Regular consumption of foods rich in vitamin C helps the body develop resistance against infections and scavenges harmful, pro-inflammatory free radicals. Vitamin C also helps to prevent respiratory problems such as asthma and lung cancer. Vitamin C has been shown to lower blood pressure, and therefore lessen the probability of hypertension.

Puslane grows in the summer months, making it a summer time leaf. However, since Holland is the largest grower of the unique herb, growing it in large greenhouses, you can find purslane year round.

When buying purslane, make sure the leaves are not wilted or discolored. Store purslane in a sealed bag in your refrigerator for up to one week.
