Acai Berry Salad with Plum and Mango

Ingredients (serves four people)

  • 2 Tablespoons Olive Oil
  • 1 Tablespoon White Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 pc Garlic, minced
  • Sea salt and Pepper to Taste
  • 8 cups Salad Greens
  • 4 pc Plum, diced
  • 1 cup Mango, diced
  • ½ cup Avocado, diced
  • ½ cup Acai Berries

In a medium sized mixing bowl, combine the avocado, mango, acai berries, olive oil, vinegar and mustard. Mix well. Place the salad greens on a plate, then top with the fruit mixture. Serve chilled.
