Blueberry and Arugula Salad

Ingredients

(serves two people)

  • 1 cup Blueberries
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoon Olive Oil
  • Sea salt and Pepper to Taste
  • 4 cups Arugula
  • 12 pc Cherry Tomato
  • 1 pc Shallot
  • 1 Tablespoon Red Wine Vinegar
  • 1 pc Cucumber
  • ¼ cup Almonds, shaved

Directions

1. To prepare the salad, combine the blueberry, alomonds, arugula, lemon juice, tomatoes, shallot, vinegar and olive oil. Mix well, then place on a chilled plate. Serve immediately.
