Ingredients (serves four people)
- 4 fillets Mackerel
- 1 cup Mango, chopped
- ¼ cup Strawberry, chopped
- 1 Tablespoon Olive Oil
- ½ teaspoon Mint
- 1 teaspoon Lime Juice
- Sea Salt and Pepper to Taste
Directions
1. In a mixing bowl, combine the mango, strawberry, ½ the olive oil, mint and lime juice. Mix well, then reserve on the side.
2. Heat a broiler to temperature.
3. Place the mackerel skin side up on a baking sheet. Top with the salt and pepper as well as the remaining olive oil. Place under the broiler and cook for four minutes. Turn the fish and continue to cook until the fish is fully cooked. Remove from the oven and place on a serving plate. Top with the mango salsa and serve immediately.
