Ingredients
- 2 Tablespoons Olive Oil
- 1 pc Shallot, chopped
- 1 pc Garlic, finely minced
- 1 cup Quinoa
- 2 cups Vegetable Broth
- 1 Tablespoon Curry Powder
- Sea Salt and Pepper to Taste
Directions
1. Heat the olive oil in a medium sized cooking pot to medium high heat. Add the onion and garlic and cook for two minutes. Add the quinoa and curry and cook until lightly toasted, around five minutes. Next, add the vegetable broth and cook until the mixture reaches a simmer. Reduce the heat to low, then cook for 20 minutes, or until the quinoa is tender. Add salt and pepper as needed, and serve warm.
