Ingredients (serves four people)
- 2 cups Fava Beans, cleaned
- 1 teaspoon Olive Oil
- 1 pc Shallot, chopped
- 2 pc Garlic, minced
- ¼ cup White Wine
- 1 Tablespoon Thyme
- ¼ cup Water
- Sea salt and Pepper to Taste
1. In a medium sized cooking pot, heat the olive oil to medium high heat. Add the shallot and garlic and cook for one minute. Next, add the thyme and cook for an additional 30 seconds. Add the fava beans, and cook for three minutes, or until they slightly brown. Add the white wine, then reduce the heat to medium low. Allow the wine to reduce for two minutes, then add the water. Cook for five minutes, then place the mixture in a blender. Blend on high until a smooth paste forms, adding sea salt and pepper as needed. Serve with your favorite fish.
