Ingredients
- 1 cup Millet
- 4 cups Vegetable Broth or Water
- 2 pc Bell Pepper, chopped
- 1 cup Black Beans, cooked
- ½ cup Tomato, diced
- 1 pc Shallot, chopped
- 2 pc Garlic, finely minced
- Sea Salt and Pepper to Taste
Directions
1. In a medium sized cooking pot, combine the millet, garlic, shallot and vegetable broth. Bring to a boil, then reduce the heat to low. Cover the millet and cook for 15 minutes, or until the water is fully absorbed.
2. Add the blackbeans, pepper and tomato to the pot and mix well. Place the cover back on the pot and continue to cook for ten minutes. Remove from the stove and serve warm. Garnish with a small amount of chopped parsley if desired.
