Ingredients (serves four people)
- 1 cup Pickled Herring
- 2 pc Beets, boiled and peeled
- ½ cup Fennel, thinly sliced
- 1 pc Avocado, sliced
- 1 teaspoon Mint, chopped
- 2 Tablespoons Walnut Oil
- 1 Tablespoon Red Wine Vinegar
- 2 Tablespoons Cashew
- Sea Salt and Pepper to Taste
Directions
1. Chop the beets into a small dice. Place the beets in a medium sized mixing bowl, then combine with the fennel, avocado, mint, walnut oil, red wine vinegar, cashew, sea salt and pepper. Mix well, then place on four serving plates. Top with the pickled herring then serve chilled.
