Ingredients
- 1 Tablespoon Olive Oil
- 2 pc Garlic, minced
- ½ pc Red Onion, finely chopped
- ½ cup Bell Pepper, chopped
- ½ cup Carrot, finely chopped
- 1 Tablespoon Red Wine Vinegar
- 2 cups Porcini Mushrooms
- 1 cup Tomato, diced
- 1 Tablespoon Basil, chopped
- 6 cups Whole Wheat Penne Pasta
- Sea Salt and Pepper to Taste
Directions
1. Heat the olive oil in a medium sized sauté pan, then add the porcini mushrooms. Cook until golden brown on the bottom, then add the garlic. Cook for two minutes then reserve on the side.
2. Place the mushrooms and remaining ingredients in a bowl and mix well. Allow to cool in the refrigerator then serve chilled.
