Ingredients (serves four people)
- 2 pc Mango, cubed
- ¼ cup Pumpkin Seeds
- 1 pc Red Bell Pepper, chopped
- 1 cup Black Beans, cooked
- 1 cup Corn
- 3 pc Scallions, sliced
- ¼ cup Cilantro
- 1 pc Lemon, Zested and Juiced
- 2 Tablespoons Olive Oil
- 1 teaspoon Garlic, minced
- 1 teaspoon Cumin, ground
- 8 cups Salad Greens
Directions
1. In a medium sized bowl, combine the mango, pumpkin seeds, bell pepper, black beans, corn, scallions, cilantro, lemon, olive oil and cumin. Mix well.
2. Place the salad greens on a plate, then top with the mango mixture. Serve chilled.
