Ingredients (serves four people)
- 6 pc Beets
- 8 cups Salad Greens
- 3 Tablespoons Olive Oil
- 2 pc Garlic, minced
- 2 pc Shallot, chopped
- Sea salt and Pepper to Taste
- 1.5 Tablespoons Raspberry Vinegar
1. Preheat an oven to 350⁰F. Wash the beets under cold water, then place in a baking pan. Coat with ½ the olive oil, then bake in the oven covered with aluminum foil for one hour, or until the beets are fully cooked. Once cooked, remove from the oven and allow to cool for 20 minutes. Peel the beets then slice thinly.
2. While the beets are cooling, prepare the salad. In a large bowl, combine the salad greens, garlic, shallot, remaining olive oil and vinegar. Mix well. Place on a plate, then top with the beets. If desired, serve with goat cheese and roasted walnuts.
