Salad Greens with Roquefort and Pear

Ingredients (serves four people)

  • 1 /2 cup Roquefort Cheese
  • 2 pc Pears, sliced
  • 2 cups Spinach
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoon Olive Oil
  • Sea salt and Pepper to Taste
  • 4 cups Arugula
  • 12 pc Cherry Tomato
  • 1 cup Cucumber, diced
  • 1 pc Shallot
  • 1 Tablespoon Red Wine Vinegar

Directions

1. To prepare the salad, combine the spinach, arugula, lemon juice, tomatoes, shallot, cucumber, vinegar and olive oil. Mix well, then place on a chilled plate. Top with the cheese and sliced pear and serve immediately.
