Ingredients (serves four people)
- 1 cup Watermelon
- ¼ cup Almonds, slivered
- 1 Tablespoon Lemon Juice
- 2 Tablespoon Olive Oil
- Sea salt and Pepper to Taste
- 4 cups Arugula
- 12 pc Cherry Tomato
- 1 pc Shallot
- 1 Tablespoon Red Wine Vinegar
1. To prepare the salad, combine the watermelon, arugula, lemon juice, slivered almonds, tomatoes, shallot, vinegar and olive oil. Mix well, then place on a chilled plate. Serve immediately.
