Salad of Spinach, Sunflower Seeds and Pomegranate

Ingredients (serves four people)

  • 8 cups Baby Spinach leaves
  • 1 pc Shallot, chopped
  • ½ cup Sunflower Seeds
  • ¼ cup Feta Cheese
  • ¼ cup Alfalfa Sprouts
  • 12 pc Asparagus, cooked
  • 1 pc Pomegranate, seeded
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Red Wine Vinegar

Directions

1. Place the spinach in a salad bowl. Top with red onion, sunflower seeds, feta, and sprouts. Sprinkle pomegranate seeds over the top, and drizzle with vinegar and olive oil. Serve immediately.
