Japanese Noodle’s With Shimeji Mushrooms

Ingredients

  • ½ pound Japanese style noodles
  • ¼ cup Olive Oil
  • 2 pc Garlic, minced
  • ½ pound Shimeji mushrooms
  • 1 ½ Tablespoons Soy Sauce
  • 2 teaspoons Miso Paste
  • Sea Salt and Pepper to Taste
  • 1 Tablespoons Parsley, finely chopped

Directions

1. Cook the noodles according to package instructions. While the noodles are cooking, heat the oil in a medium sized cooking pot and add the garlic. Cook for 30 seconds, then add the mushrooms. Reduce the heat to low then add 2 Tablespoons of the cooking liquid along with the soy sauce and miso. Add the chopped parsley and serve warm.
