Shrimp Ceviche with Avocado Oil

Ingredients (serves four people)

  • 1 pc Cantaloupe
  • 8 pc Shrimp
  • 2 Tablespoons Avocado Oil
  • 1 Tablespoon Lime Juice
  • 1 teaspoon Cilantro
  • Sea salt and Pepper to Taste

1. Slice the melon very thinly, then place on four plates. Place in the refrigerator and chill for one hour.
2. In a small bowl, combine the shrimp, avocado oil, lime juice, cilantro, sea salt and pepper. Allow to marinate for 20 minutes, then place on top of the melon. Serve immediately.
