Shrimp Poached in Coconut Water

Ingredients (serves four people)

  • 16 pc Shrimp
  • 2 cups Coconut Water
  • 1 teaspoon Sea Salt
  • ¼ cup Cocktail Sauce
  • 4 pc Lemon Wedges
  • Ice as Needed, crushed

Directions

1. In a medium sized cooking pot, heat the coconut water to a boil along with the salt. Once the coconut water boils, remove from the heat and add the shrimp, then cook for four minutes. Once four minutes pass, remove the shrimp from the cooking liquid and chill in the refrigerator.

2. Place the ice in a martini glass, then place the shrimp around the outside of the glass. Place the cocktail sauce in the middle of the glass and garnish with the lemon wedge. Serve chilled.
