Ingredients (serves four people)
- 2 quarts Water
- 1 cup Lean Pork, chopped
- 6 cups Collard Greens
- 1 pc Garlic, minced
- 2 Tablespoons Olive Oil
- Sea salt and Pepper to Taste
1. In a large cooking pot, combine the collard greens, water and pork. Cook on high heat until the mixture reaches a boil. Reduce the heat to medium, then cook for 30 minutes. Next, add the garlic, olive oil, sea salt and pepper. Cook for an additional hour, making sure to stir occasionally. Once the collards are tender, remove from the water and serve.
