Soy Milk Tapioca Pudding

Ingredients (serves four people)

  • 3 cups Soy Milk
  • ½ cup Tapioca, quick cooking
  • 3 Tablespoons Honey
  • ¼ teaspoon Sea Salt
  • 2 Eggs, whisked
  • 1 teaspoon Vanilla Extract

Directions

1. In a medium sized cooking pot, combine the soy milk, tapioca, honey and salt. Bring the mixture to a boil, making sure to stir as the tapioca heats. Once boiling, reduce the heat to low and cook for ten minutes.

2. Place the eggs in a mixing bowl and whisk well. Add 2 tablespoons of the hot mixture to the eggs to temper them, then whisk once again. Add another 2 tablespoons to the eggs, then add the eggs to the cooking pot. Continue to cook the tapioca until it begins to thicken, around three minutes. Remove from the heat and add the vanilla extract. Place in a bowl and chill the tapioca until needed.
