Ingredients (serves four people)
- ¾ pound Bitter Melon
- 2 pc Garlic, minced
- 1 teaspoon Chili Pepper
- 2 Tablespoons Olive Oil
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Balsamic Vinegar
- 1 teaspoon Honey
1. Cut the bitter melon into long slices, then sprinkle with sea salt. Place in a colander and allow the melon to drain for fifteen minutes. While the melon is sitting, combine the chili pepper and garlic in a a small bowl.
2. Heat a wok over medium high heat, then add the olive oil. Add the minced garlic and chili pepper mix, then continue to cook for thirty seconds. Add the bitter melon slices, then cook for two minutes. Next, add the soy sauce and vinegar, followed by the sugar. Cook for an additional two minutes, then serve warm.
