Sweet Potato Puree

Ingredients

  • 6 pc Sweet Potato
  • ¼ pc Nutmeg, finely ground
  • ½ Tablespoon Honey
  • 1 dash Cinnamon
  • Sea salt and Pepper to Taste
  • 1 Orange, juiced
  • Water as needed

Cooking Instructions
1. Place the sweet potato on a baking pan lined with aluminum foil. Poke the sweet potato with a fork then place in an oven set to 350˚F. Cook the sweet potatoes until tender, around 90 minutes. Once tender, remove from the oven and cut the potatoes in half. Remove the inner flesh and place in a bowl.
2. Add the nutmeg, honey, cinnamon, sea salt and pepper to the bowl and mix well. Allow to sit for five minutes then place in a food processor. Add the orange juice and begin to blend the puree. Add water as needed to thin the puree to a smooth consistency. Serve warm with a piece of broiled fish or grilled chicken.
