Ingredients
- 1 cup Red Onion, chopped
- 1 cup Celery, diced
- 1 cup Carrot, chopped
- 2 pc Garlic, finely minced
- 2 Tablespoons Olive Oil
- 2 pc Tomato, diced
- 1 cup Tomato Juice
- 3 cups Vegetable Broth
- ¼ cup Barley
- Sea Salt and Pepper to Taste
Directions
1. In a medium sized cooking pot, heat the oil to medium high heat. Add the onion, celery, carrot and garlic and cook for four minutes. Add the tomato, tomato juice and vegetable broth and bring the mixture to a simmer. Reduce the heat to low, then add the barley. Cover the pot and cook for 35 to 40 minutes, or until the barley is fully cooked. Add salt and pepper as needed, then serve warm with crackers or toast points.
