Trout Amandine

Ingredients (serves four people)

  • 4 pc Trout
  • ¼ cup Whole Wheat Flour
  • ¼ cup Olive Oil
  • ½ cup Almonds, sliced
  • 3 Tablespoons Lemon Juice
  • 1 Tablespoon Parsley, chopped
  • 8 slices Lemon
  • Sea Salt and Pepper to Taste

Directions

1. Place the whole wheat flour on a plate. Cover the skin side of the trout with the whole wheat flour, then salt and pepper the fish.

2. Heat ½ of the olive oil in a large sauté pan to medium high heat. Add 2 pieces of trout skin side down, and cook until the fish is golden brown on the bottom. Turn the fish, then add ½ of the lemon juice, almonds and parsley. Cook for three minutes, then remove the fish and place in a baking pan. Clean the sauté pan, then cook the remaining two pieces of trout. Add the remaining lemon juice, parsley and almonds. Once cooked, place the four pieces of trout on dinner plates, then top with the sliced lemon. Serve warm.
