Watercress Salad with Avocado and Peanuts

Ingredients(serves four people)

  • 2 Tablespoons Red Wine Vinegar
  • 1 pc Shallot, chopped
  • 3 Tablespoons Roasted Almonds
  • 6 cups Watercress
  • 2 cups Arugula
  • 1 pc Avocado, diced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Soy Sauce
  • 12 pc Cherry Tomatoes
  • 2 cups Spinach
  • Sea salt and Pepper to Taste

1. In a bowl, combine all ingredients and mix well. Separate onto four plates and serve chilled.
