Ingredients
- 2 cups Wild Rice, cooked
- 2 Tablespoon Olive Oil
- 1 pc Onion, chopped
- 1 pc Garlic, finely minced
- 3 cups Chicken Broth
- 1 cup Pumpkin, cooked
- Sea Salt and Pepper to Taste
- 1 Tablespoon Parsley
- 1 Tablespoon Chives
- ¼ teaspoon Cinnamon
- ½ cup Orange Juice
- 1 teaspoon Orange Zest
Directions
1. Cook the wild rice according to the instructions on the package. Cut the pumpkin into cubes which are round ½ inch in size, then cook in boiling water until tender.
2. Heat the olive oil in a large cooking pot to medium high heat. Add the onion and cook for two minutes. Add the garlic and cook for an additional two minutes. Add the broth, then bring to a boil. Lower the heat to low, then add the herbs and cinnamon. Cook for five minutes, then add the rice and pumpkin. Cook for five more minutes, then add the orange juice and lemon zest. Mix well, then serve warm.
