Ingredients
- 1 Tablespoon Olive Oil
- 2 cups Oyster Mushrooms
- ½ cup Onion, chopped
- 2 pc Garlic, finely minced
- 1 cup Quinoa
- 2 cups Vegetable Broth
Directions
1. Combine the quinoa and vegetable broth in a medium sized cooking pot and cook until tender, around 30 minutes.
2. While the quinoa is cooking, prepare the mushrooms. Heat the olive oil in a medium sized skillet to medium high heat. Add the onion and garlic and cook for one minute. Add the mushrooms, then reduce the heat to medium low. Cook for five minutes, then add the quinoa. Add salt and pepper as needed, then serve warm.
