Ingredients
- 1 ½ cup Whole Grain Flour
- ½ cup Flax Seed
- 1 cup Oat Bran
- 1 cup Apple Sauce
- 2 teaspoons Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Sea Salt
- 2 teaspoons Cinnamon
- ¾ cup Skim Milk
- 2 Eggs
- 2 cups Carrot, shredded
- ½ cup Apple, diced
- ½ cup Raisins
- ½ cup Walnuts, chopped
Directions
1. Preheat an oven to 350⁰F. Line a muffin pan with a small amount of cooking spray or cupcake forms.
2. In a large bowl, combine the flour, flax, oat bran, baking soda, baking powder, cinnamon and salt. In a separate bowl, combine the apple sauce, eggs, vanilla and milk. Combine the two bowls, making sure to mix well. Next, add the nuts, raisins, apple and carrot. Mix well, then place the batter in the muffin molds.
3. Bake the muffins for 15 to 20 minutes, or until a toothpick can be easily inserted into the muffins. Allow to cool for 15 minutes, then serve warm.
