Balsamic Brown Rice Salad

Ingredients

  • 2 cups Water
  • 1 cup Brown Rice
  • 2 pc Shallot, chopped
  • ¼ cup Celery, chopped
  • ¼ cup Raisins
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Parsley
  • Sea Salt and Pepper to Taste

Directions

1. In a medium sized cooking pot, heat 1 teaspoon of the olive oil to medium high heat. Add the shallot and celery and cook for one minute. Add the rice and coat the rice in the oil. Next, add the water and raisins. Cook for 30 minutes, or until the rice is tender.

2. Once the rice is cooked, place it in a bowl. Add the remaining olive oil, vinegar and parsley. Mix well, then add salt and pepper as needed. Serve warm or chill for future use
