Ingredients (serves four people)
- 4 cups Carrot
- 1 cup Orange Juice
- ½ teaspoon Caraway Seeds
- 1 pc Garlic
- 1 pc Shallot
- 1 Tablespoon Olive Oil
1. In a medium sized cooking pot, heat the oil to medium high heat. Add the garlic and shallot and cook for 30 seconds. Add the carrot and cook for an additional five minutes. Next, add the caraway seeds followed by the orange juice. Bring to a simmer, then reduce the heat to medium low. Cover the carrots and cook for fifteen minutes. Once cooked, placed the carrots in a blender and blend until a smooth paste forms. Serve with grilled fish and vegetables for a wonderful summer inspired meal.
