Cauliflower Mash

Ingredients (serves four people)

  • 2 cups Cauliflower Florets
  • 1 Tablespoon Olive Oil
  • 1 pc Garlic, minced
  • 1 pc Shallot, minced
  • ¼ cup White Wine
  • Sea salt and Pepper to Taste

1. In a medium sized cooking pot, heat the olive oil to medium high heat. Add the garlic and shallot and cook for thirty seconds. Next, add the cauliflower and cook for three minutes. Add the white wine, along with 1 cup of water. Cover the cauliflower and cook for ten minutes.
2. Remove the cover and cook the mixture for an additional ten minutes. Mash the cauliflower using a fork, then add the sea salt and pepper. Serve warm.
