Soup of Swiss Chard and White Beans

Ingredients (serves four people)

  • 1 Tablespoon Olive Oil
  • 2 pc Garlic, minced
  • 1 pc Shallot, chopped
  • ½ cup Carrot, diced
  • 3 cups Swiss Chard, chopped
  • 1 cup White Beans, cooked
  • 3 cups Vegetable Broth
  • Pecorino Cheese as Needed

1. In a medium sized cooking pot, heat the oil to medium high heat. Add the onion, shallot and carrot and cook for five minutes. Next, add the Swiss chard and broth and cook for two minutes. Add the beans, then cover the pot. Cook for ten minutes, then serve warm. Top the soup with cheese if desired, and serve with whole wheat bread.
