Nori Soup

Ingredients (serves four people)

  • 4 cups Vegetable or Chicken Broth
  • ¼ cup Cashew
  • 1 pc Shallot
  • 1 pc Garlic
  • 1 Tablespoon Olive Oil
  • 4 pc Nori, dried and sliced
  • Sea salt and Pepper to Taste
  • 1 Tablespoon Sesame Oil

1. In a medium sized cooking pot, heat the oil to medium high heat. Add the shallot and garlic and cook for two minutes. Add the cashew and cook for one minute. Add the broth, and cook the soup for ten minutes. Remove the soup from the stove and add the nori and sesame oil. Serve warm.
