Kombu and Egg Soup

Ingredients (serves four people)

  • 1 Quart Vegetable Broth
  • 1 cup Kombu
  • 1 Tablespoon Miso Paste
  • 1 pc Carrot, diced
  • 4 pc Egg, Hardboiled
  • Sea salt and Pepper to Taste

1. In a medium sized cooking pot, bring the water and kombu slices to a gentle boil. Add the miso paste and stir. Simmer for five minutes, then add the carrots. Cook for ten minutes, then add the eggs. Simmer for three minutes, then turn off the heat. Add sea salt and pepper as needed then serve warm.
