Ingredients (serves two people)
- 2 pc Chicken Breast (6 ounces each)
- 8 pc Garlic
- 1 Tablespoon Olive Oil
- Sea salt and Pepper to Taste
- 1 pc Shallot, chopped
- 1 cup Red Wine
1. Preheat an oven to 350⁰F
2. Place the garlic in a small bowl with ½ the olive oil, sea salt and pepper. Mix well, then place on a piece of aluminum foil. Wrap the foil, then place on a baking pan. Heat in the oven for one hour, or until the garlic is light brown and soft.
3. In a large sauté pan, heat the remaining olive oil to medium high heat. Add the chicken, and cook until golden brown on the bottom, around five minutes. Turn the chicken and cook the remaining side for five minutes.
4. Remove the chicken from the pan, and add the garlic and shallot. Cook for one minute, then add the red wine. Allow the wine to reduce by 1/2. Allow the sauce to thicken, then place the chicken back in the pan. Cover and cook for five minutes, then serve warm.
