Coconut Wilted Spinach

Ingredients (serves two people)

  • 4 cups Spinach
  • 1 pc Shallot, chopped
  • 1 pc Garlic, minced
  • 1 Tablespoon Olive Oil
  • ½ teaspoon Cumin, ground
  • ¼ teaspoon Chili Flakes
  • 1 Tablespoon Coconut Flakes
  • 1 teaspoon Lime Juice

1. In a medium sized skillet, heat the oil to medium high heat. Add the shallot, garlic and cumin. Cook for two minutes, then add the spinach. Allow the spinach to cook, then add the chili flakes, lime juice and coconut. Cook for an additional two minutes, then serve.
