Ingredients (serves four people)
- 1 cup Dungeness Crab, cleaned
- 2 cups Spinach
- 1 Tablespoon Lemon Juice
- 2 Tablespoon Olive Oil
- Sea salt and Pepper to Taste
- 4 cups Arugula
- 12 pc Cherry Tomato
- ¼ cup Olive, sliced
- 1 cup Cucumber, diced
- 1 pc Shallot
- 1 Tablespoon Red Wine Vinegar
Directions
1. To prepare the salad, combine the spinach, arugula, lemon juice, tomatoes, shallot, cucumber, olives, vinegar and olive oil. Mix well, then place on a chilled plate. Top with the crab and serve immediately.
