Ingredients (serves four people)
- 8 pc Sardines
- 1 Tablespoon Olive Oil
- 1 teaspoon Lemon Juice
- Salt and Pepper to Taste
- 1 teaspoon Parsley
- ¼ cup Olives
- 1 pc Tomato, sliced
- 1 cup Stewed Tomato
Directions
1. Preheat an oven to 350⁰F.
2. Place the stewed tomato in a baking dish. Salt and pepper the fish then place in the baking pan. Top with the olive oil, followed by the olives and sliced tomato. Drizzle the olive oil and lemon juice on top, then garnish the dish with the parsley. Bake in the oven for 20 to 25 minutes, or until the sardines are fully cooked. Once cooked, remove from the oven and serve immediately.
