Coffee Risotto

Ingredients (serves four people)

  • 1 Tablespoon Instant Coffee
  • ½ cup Orange Juice
  • ½ cup Arborio Rice
  • 2 cups Coconut Milk
  • 1 Tablespoon Olive Oil
  • 1 pc Shallot, finely minced
  • Sea Salt and Pepper to Taste

Directions

1. Place the orange juice and instant coffee in a small pot and bring to a boil. Remove from the heat and reserve on the side.

2. Place the olive oil in a shallow cooking pan. Bring to medium heat, then add the shallot. Cook for one minute, then add the rice, making sure to coat the rice with the oil.

3. Next, add the orange-coffee mixture. Allow the liquid to absorb into the rice, then start to add the coconut milk in ½ cup increments. Once the coconut milk absorbs into the liquid, add salt and pepper as desired. Serve warm.
