Chinese Tea Leaf Eggs

Ingredients (serves four people)

  • 4 pc Eggs
  • ½ teaspoon Sea Salt
  • 4 cups Water
  • 1 Tablespoon Soy sauce
  • 2 Tablespoons Black Tea Leaves
  • ¼ teaspoon Cinnamon
  • 1 pc Star Anise
  • 1 teaspoon Orange Zest
  • Directions

1. In a medium sized cooking pot, combine the eggs and salt and cover with water. Bring the mixture to a boil, then reduce the heat to low. Slowly simmer the eggs for 20 minutes, then remove from the heat. Cool the eggs, then gently crack the shells of the eggs.

2. In a medium sized cooking pot, combine the water, soy sauce, tea leaves, star anise, orange zest and cinnamon. Bring to a boil, then reduce the heat to low. Cover the cooking pot and continue to cook for 30 minutes. Remove the mixture from the stove, then add the eggs. Allow the eggs to cure for four hours. Remove the eggs from the cooking liquid and chill in the refrigerator until ready to use. Serve with salad greens if desired.
