Ingredients (serves four people)
- 1 Tablespoon Olive Oil
- 2 pc Shallot, chopped
- 2 pc Garlic, finely minced
- 2 cups Pigeon Peas, cooked
- 1 cup Stewed Tomatoes
- 3 cups Water
- 1 ½ cups Brown Rice
- Sea Salt and Pepper to Taste
Directions
1. In a medium sized cooking pot, heat the olive oil to medium high heat. Add the shallot and garlic and cook for three minutes. Add the brown rice and stir until it is completely coated with the oil. Cook for 30 seconds, then add the remaining ingredients. Bring the mixture to a boil, then reduce the heat to low. Cook for 40 to 45 minutes, or until the rice is fully cooked and tender. Serve with grilled fish or chicken if desired.
