Ingredients (serves four people)
- 2 cups Soy Beans, fresh
- ¼ cup Shaved Almonds
- 1 teaspoon Walnut Oil
- 1 Tablespoon Lemon Juice
- 1 teaspoon Lemon Zest
- 1 teaspoon Parsley, chopped
1. In a medium sized cooking pan, bring a large pot of water to boil. Add the soy beans and cook unit tender, around five minutes.
2. While the soy beans are cooking, place the almonds, walnut oil, lemon juice, zest and parsley in a bowl. Mix well. Add the cooked green beans and mix well. Serve as a side salad with any dinner of your choice.
