Roasted Asparagus with Brazil Nuts

Ingredients (serves four people)

  • 1.5 pounds Asparagus
  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, finely minced
  • ¼ cup Brazil Nuts, chopped
  • Sea salt and Pepper to Taste
  • 1 Tablespoon Lemon Juice

1. Preheat an oven to 350 ⁰F. Wash the asparagus under cold water, then pat dry. Lay the asparagus in a baking pan, then top with the olive oil, garlic, lemon juice, brazil nuts, sea salt and pepper. Bake in the oven for 10 to 12 minutes, or until the asparagus appear roasted. Serve warm as an appetizer with salad greens if desired.
