Pumpkin Seed and Mango Salad

Ingredients (serves four people)

  • 2 pc Mango, cubed
  • ¼ cup Pumpkin Seeds
  • 1 pc Red Bell Pepper, chopped
  • 1 cup Black Beans, cooked
  • 1 cup Corn
  • 3 pc Scallions, sliced
  • ¼ cup Cilantro
  • 1 pc Lemon, Zested and Juiced
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Cumin, ground
  • 8 cups Salad Greens

Directions

1. In a medium sized bowl, combine the mango, pumpkin seeds, bell pepper, black beans, corn, scallions, cilantro, lemon, olive oil and cumin. Mix well.

2. Place the salad greens on a plate, then top with the mango mixture. Serve chilled.
