Ingredients (serves 8 people)
1 cup Dates
¼ cup Coconut Oil
¼ cup Agave Syrup
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract
¼ teaspoon salt
½ cup Cacao Powder
½ cup Walnuts, chopped
¼ cup Raisins
Directions
1. Place the dates in a food processor or blender and blend on high speed. While the dates are blending, add the coconut oil, agave, cinnamon, vanilla and salt. Continue to blend until a smooth paste forms, around two minutes. Add the cacao and blend for an additional 30 seconds, then remove the mixture from the blender.
2. Transfer the mixture to a mixing bowl, then add the walnuts and raisins. Mix well, then using a spoon, shape the mixture into truffle like balls. Place on a baking sheet lined with wax paper, then place in the refrigerator to harden for at least four hours. Serve chilled.
