Ingredients (Serves Four People)
- 1 pc Kiwi, diced
- 2 pc Apple, peeled and diced
- 2 pc Strawberries
- 1 Tablespoon Honey
- 4 pc Cherries, seeded
- ¼ cup Pineapple
- 1 Tablespoon Lime Juice
- 1 teaspoon Ginger, finely diced
- 4 pc Salmon
- 1 Tablespoon Coconut Oil
Cooking Instructions
1. In a large bowl, combine the kiwi, apple, strawberry, honey, cherry, pineapple, lime juice and ginger. Mix well then chill the fruit relish for at least one hour.
2. Heat the coconut oil in a sauté pan to medium high heat. Add the salmon and cook for 10 to 12 minutes, or until the salmon is at least medium well in the middle. Remove the fish from the pan and place on a plate. Top with the fruit relish, then top with a bit of extra coconut oil. Serve immediately.
